Herby-Heirloom Tomato Salad
If you're looking for a quick afternoon fix - this salad is your new go-to! When it comes to salad, the way to really level up is to add in fresh herbs. For this recipe, I used fresh mint, dill, and green onion but you can also use things like basil, rosemary, or oregano!
When it comes to the veggie situation, I used a few different colors of heirloom tomatoes, avocado, and shallots. I laid the veggies on a bed of herby greens, and drizzled with lemony-olive oil and a balsamic glaze (ooof)

Ingredients
3 heirloom tomatoes
1 avocado
1 small chopped shallot
Juice of 1 lemon
1/4 cup fresh dill
1/4 cup fresh mint
1/4 cup green onion
Olive oil
Balsamic glaze
Flaky salt and cracked pepper
Directions
Chop your fresh herbs and add them to the base of your bowl/platter.
Slice up your tomatoes and avocados, and politely position them on top of your herb situation.
Chop up one small shallot - these are a mix of garlic and onion so if you don't like that then you can skip this step.
Squeeze juice of 1 lemon and olive oil over tomatoes and herbs, then drizzle with balsamic glaze.
Sprinkle with kosher salt and cracked pepper, and for a little extra spice add some crushed red pepper on top.
